As a mom of two toddlers and a busy professional, I’m always looking for fast and healthy recipes. This recipe is one of my go-to’s for batch cooking. It also gets healthy dinner on the table fast, thanks to the Instant Pot.
For Batch cooking, this recipe usually makes lunch for my husband and me for the week. Taking lunch to work helps us save some major mulah!
The ingredients are simple and wholesome.

The Ingredients
You will need some Indian spices- cumin, garam masala, turmeric, coriander powder, and powdered red pepper. The spices in the recipe are the basics of most Indian recipes, so stocking up on these will get you far. I highly recommend a tin box like the one below to store the spices and make them easily accessible. Almost every household in India has one.

I use fresh cumin seeds, ginger, garlic, and onion in this recipe because I like the stronger taste. But, to make this recipe even easier, you could substitute them with powdered cumin, ginger, garlic, and onion for a chop-free recipe. Just add those powders to the marinade.
